In her humble opinion, Chef Maya believes that in order create exemplary dishes, the best components must be utilized in the composition of those dishes. While she procures the finest products from all over the world, her strong belief in utilizing locally sourced products has led her to develop solid relationships with local farmers that provide her with Indonesia's finest and freshest produce. Resulting in Chef Maya's unique menu, that utilizes her classical French training, takes cues from her local roots and influences from her extensive international travels.
Now, with her partner Gaby Bakrie, she leads the kitchen and the front of the house brigade at Otel Lobby. Together, they are fulfilling their dream of providing Jakarta with an elevated culinary and mixology experience in a unique environment at Otel Lobby.
